Last minute planning, last minute grocery shopping and speedy cooking, but a successful brunch nonetheless!
1 cup all purpose flour
1 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup buttermilk
3 tbsp unsalted butter, melted and cooled
a splash of orange juice (or any other fruit juice)
1/2 tsp vanilla
Mix dry ingredients.
Beat egg, add buttermilk, butter, orange juice, vanilla, and stir
Add the liquid mixture into dry mix and stir until combined
Spray waffle iron, and follow the directions on the iron!
Makes 2-3 depending on size of the waffle iron.
Note: it is even faster if you measure out the dry ingredients and put them into plastic bags so all you have to do is add the wet ingredients!
Super fast blueberry sauce (like, realllllyyy fast. really.)
1 cup frozen blueberries
1 cup orange juice
1/3 cup raw sugar
Bring the orange juice to a simmer in a sauce pan
Add blueberries and sugar and cook slowly, stirring gently occasionally until the sugar has dissolved and the blueberries are soft
Healthier (but richer) whipped topping
1/2 cup plain greek yogurt
1/2 cup heavy whipping cream
2 tbsp honey
Throw it all into a bowl and whip with whatever method your heart desires!
2 medium potatoes, chopped into 1 inch cubes, tossed in 1 tbsp of flour
1 medium carrot, chopped into half medallions
1 medium yellow onion, chopped
3 spring onions, finely chopped
2 slices of bacon, cut into small pieces
1 tbsp garlic seasoning
salt and pepper to taste
Put about 1 tbsp of olive oil in the pan, add onions and bacon
Let it sizzle. Once the onions are starting to brown, throw in the carrots and potatoes
Put it on medium heat, add seasoning, and just let it cook until the carrots and potatoes are soft
Make sure to stir every so often so the potatoes brown evenly into a golden color
Once the potatoes are soft, toss in the spring onion and serve.
1/2 cup buttermilk
1/3 cup plain greek yogurt
1 tspn oregano
1 tspn garlic seasoning
cayenne pepper (optional, to taste)
a dash of salt and pepper
Stir stir stir until everything is well blended.
Heat up a mini omelette pan and put about 1/2 tbsp of oil in it
Then pour about 1/4 of the mixture into the mini omelette pan.
Spinach (however much you want)
Shredded mozzarella cheese and cheddar cheese (or whatever you'd like!)
When the egg is just starting to set, put a few leaves of spinach on it
Cover the spinach with a slice of deli meat
When it is about set, add cheese (however much you want) to the top, fold, and serve.
Note: you can personalize this to your taste, just a simple mini omelette to go with potatoes!
Blueberry Chocolate Scone
1 1/2 cups of all purpose flour
2 tbsp raw sugar
1 tbsp cocoa powder
2 tsp baking powder
1/4 teaspoon baking soda
1/2 tsp salt
5 tbsp cold butter
1/4 cup buttermilk
2 tbsp plain greek yogurt
1 egg yolk
2 tbsp orange juice
2/3 cups of frozen blueberries
1/3 cup dark chocolate chips
Mix together all dry ingredients and cut in butter and (using your hand probably works best), combine until it resembles a coarse meal
Whisk up all the wet ingredients
Pour the wet ingredients into the dry and stir until a dough forms
Fold in blueberries and chocolate
Distribute into sprayed muffin cups, sprinkle some sugar on top and bake at 425 degrees for about 10 minutes, or until the top is brown
Makes about 12 small scones
Note: you can experiment with different fruits, perhaps with strawberries and cream cheese or raspberries and white chocolate!
